As part of Family Sharing, your child's information including their past and future purchases in the App Store, the iTunes Store, Apple Books, or Apple TV app may be shared with members of your Family if purchase sharing is turned on.
And when you use Apple Pay with credit, debit, or prepaid cards, Apple doesn't retain any transaction information that can be tied back to you. Your transactions stay between you, the merchant or developer, and your bank or card issuer.
When you use Apple Pay in apps and on the web, information necessary to process the payment is shared with the app or website. Your actual card number isn't shared with the merchant.

Apple Pay keeps anonymous data, like the purchase amount. However, this data isn't linked to users and doesn't reveal what they buy.
